Combining our delicious food with the hospitality and customer service our guests have come to know and expect, we offer the best BBQ experience in Colorado.

Rolling Smoke BBQ started as a food truck in Denver in 2014. After being laid off from 2 corporate jobs in 7 years, founder and owner Terry Walsh decided to take a different path in life. The severance he got from his 2nd layoff resulted in the food truck being built and the birth of Rolling Smoke BBQ. After 3 successful years on the streets of Denver, the first brick and mortar was opened in Stanley Marketplace. Another location followed in February of 2018 in Centennial, which also opened the door for Rolling Smoke to become a vendor at the world-famous Red Rocks Amphitheater. After making it through COVID a 3rd store opened at The Golden Mill in the spring of 2021. 

After many delays in the remodel and construction of the new patio in Wheat Ridge, we have finally opened our doors and we are ready to immerse ourselves in this wonderful community. It’s been a great start since opening on April 1st. We’ve been very fortunate to have great support from the City of Wheat Ridge and our new neighbors. We can’t wait to see where things go with this incredible space. 

Joining Walsh as operating partners in the venture are Andrew Clapp and Wade Williams, with management support from Jason “Kook” Kuykendall and Ed Kammerer.
